Francisco Montellano learned early the joys of food and family. After studying the hospitality industry, he got the opportunity to follow his dreams to California and began working with the Maggiore Family in 1994 at Joey’s California Bistro, in Coronado, where he began as a shift manager, and soon after was upgraded to a manager.
In 1996, Francisco was moved to Tomaso’s in Coronado, where he assisted in the opening, working alongside Melissa Maggiore, as a General Manager. After several years in Coronado, Tomaso Maggiore transferred Francisco to one of his flagship California restaurants, Tuscany, in La Costa. There, Francisco was the General Manager and was responsible for all major decisions. Throughout his years at Tuscany, Francisco refined his skills in the business, learned how to operate and manage the kitchen, and even learned how to prepare the recipes.
